Is Tallow A Good For Roasting Potatoes?
High Smoke Point: Beef tallow has a high smoke point, around 400ºF, making it an ideal oil for roasting potatoes or other vegetables without producing carcinogens.
Rancidity: One of the properties of tallow is that it resists oxidation and can be stored long term on the pantry shelf. Unlike most of the seed oil counterparts on the market today.
Is Tallow Healthy?
There are different types of tallow but suet is the most prized especially for cooking. Suet renders hard and white and has a the least beefy flavor when rendered making it ideal for roasting potatoes.
Nutritional Benefits: Suet particularly is 70-80% saturated fat which means it’s comprised of short chain fatty acids. These fats have antimicrobial properties, are readily absorbed by the digestive system and contribute to the health of our immune system. What Herbs Are Good In Roasted Potatoes
What fresh herbs to use comes down to your personal preference. My personal favorite combination is: Thyme, Chives and Tarragon. Other herb combinations that would be delicious are:
- Parsley and Rosemary
- Sage and Minced Garlic
- Lemon Thyme, Lemon Juice and Fresh Cracked Black Pepper
- Thyme, Oregano, Rosemary and Marjoram

HOT HOT OVEN – A hot oven, around 400ºF or 425ºF will roast your potatoes thoroughly softening the interior while creating a browned crispy exterior. Don’t cook potatoes Low and Slow. Thankfully the high smoke point of tallow allows you to crank the heat on the potatoes.
Roasted potatoes will keep for several days in the refrigerator in an air tight container. Use leftover roasted potatoes in egg scrambles, a quick fry for a breakfast side or inside a breakfast burrito. Try using glass not plastic to avoid any microplastics.
How To Make Tallow And Herb Roasted Potatoes

Step 1
Preheat oven to 425ºF and place a 9×13″ baking dish with tallow in the oven.
Allowing the tallow to melt for the potatoes.

Step 2
Chop all your potatoes and fresh herbs.

Step 1
Once the tallow has melted (5 minutes) remove the baking dish and place potatoes and herbs in dish, toss with melted tallow and season.

Step 2
Bake for 20-30 minutes until tender.
Remove from oven and top with fresh grated parmesan.

Easy Tallow and Fresh Herb Roasted Parmesan Potatoes Recipe
Ingredients
- 8 Gold Potatoes
- 1/4 Cup Tallow
- 1/4 Cup Grated Parmesan Cheese
- 1-2 tsp Salt
- 1 tsp Black Pepper
- 2-4 Cloves Garlic minced
- 1/4 Cup Fresh Herbs example combination: thyme, chives, tarragon
Instructions
- Preheat oven to 425ºF and place a 9×13″ baking dish with tallow in the oven. Allowing the tallow to melt for the potatoes.
- Chop all the potatoes and fresh herbs.
- Once the tallow has melted (5 minutes) remove the baking dish and place potatoes and herbs in dish, toss with melted tallow and seasonings.
- Bake for 20-30 minutes until tender. Stir only the last 5 minutes to insure potatoes have a crisp exterior.
- Remove from oven and top with fresh grated parmesan. Allowing the heat from the potatoes to melt the cheese.
- Serve as a dinner side or bring to a holiday or family gathering.
