Chicken Thighs – Juicy and tender, chicken thighs take on the flavor of all the spices in this dish.
Andouille Sausage – A zesty sausage to give this jambalaya recipe a unique flavor. Aidells is our favorite!

Tips For chicken and sausage jambalaya
- If you prefer spice try one Serrano pepper and three Anaheim peppers.
- You can always substitute the andouille sausage for another variety. Chicken apple lends to a sweeter dish.
How To Make Chicken and sausage jambalaya

Step 1
Start lime rice on the stovetop by mixing rice, lime juice, salt and water. Cook until done while making jambalaya.

Step 2
Heat a Dutch Oven over medium heat with 2 tablespoons of olive oil.

Step 3
Cook chicken thighs over medium heat coated in all the spices.

Step 4
Add in chopped peppers and onion. Continue to cook.

Step 5
Dice andouille sausage into bite sized pieces and add to the dutch oven.

Step 6
Chop cilantro and add to Dutch Oven.

Step 7
Remove chicken thighs. (It is ok if they are not cooked entirely). Dice and return to dutch oven.

Step 8
Add black beans and broth. Allow to simmer and cook thoroughly. Taste occasionally to check seasoning flavor. Add as desired.

Ingredients
- 2 lb Chicken Thighs – Bone In You can save the bones for homemade chicken broth
- 4 Cups Black Beans
- 2 Cups Rice (4 Cups Water)
- 1 tbsp Lime Juice
- 1 lb Mini Sweet Peppers
- 1 Onion
- 1 Cup Cilantro – Chopped
- 12 oz Cajun Andouille Sausage
- 4 Cups Broth
- 2 Tbsp Olive Oil
Seasonings
- 1 tbsp Garlic Granules
- 1 tbsp Paprika
- 1/2 tsp Chili Powder
- 1/2 tsp Red Pepper Flakes
- 2 tsp Cumin
- 2 tbsp Salt Reserve 1 Tbsp to add in with broth
- 1/2 tsp Liquid Smoke
Instructions
