Purely delicious, this apricot sorbet is simply delightful. Minimal ingredients and sweetened with maple syrup, make this apricot sorbet a perfect dessert on those warm summer days.

When life gives you lemons…no, when life gives you apricots, make apricot sorbet! Ever have a batch of apricots whose flavor is slightly subpar? Just recently I was sitting with a bunch of apricots that weren’t ideal for fresh eating. My original plan was to dehydrate them, but these hot summer days had our family craving something refreshing therefor, apricot sorbet was born. The beauty in sorbet is that you can add other ingredients to amplify the flavor and that’s exactly what I did.

Making sorbet is really quite simple. Minimal ingredients and minimal time yield you a batch in a few hours, perfect for those beach days where you crave dessert. This sorbet took me about ten minutes to prep and was ready by the time we finished dinner. Dessert is a tricky one in a healthy household. You crave something tasty and sweet but do not want the added sugar. This apricot sorbet is sweetened with maple syrup, satisfying that sweet tooth while also being healthy in the process.

What you will need

  • Fresh Apricots
  • Lemon Juice
  • Coconut Water
  • Maple Syrup
  • Ice-cream Maker
  • Spatula
  • Metal Loaf Pan
  • Parchment Paper
  • Blender

How to make apricot sorbet

Pit your apricots and place them in a blender. Add coconut water, maple syrup and lemon juice and purée. Taste test to see if you need any additional maple syrup or lemon juice. Add to ice cream maker and blend.

Pro Tip: Begin blending in maker right away to avoid freezing!

Sorbet freezes very quickly. Begin blending right away even if you are adding more sorbet to the blender. You don’t want to troubleshoot a blade that is frozen to the sides of the bowl. Trust me!

Once your sorbet reaches milkshake consistency, pour into a parchment lined loaf pan, cover with parchment paper and place in the freezer for 3-4 hours or until frozen.

Ingredients
  

  • 4 Cups Fresh Pitted Apricots
  • 3 Tablespoons Lemon Juice
  • 2 Tablespoons Maple Syrup
  • 1/4 Cup Coconut Water

Instructions
 

  • Pit Apricots.
  • Place all ingredients in blender and purée.
  • Taste for desired flavor.
  • Pour into ice cream maker and blend.
  • Pour sorbet into parchment lined loaf pan, cover and place in freezer for 3-4 hours or until frozen.

Notes

You could substitute orange juice for the coconut water, however consider reducing your lemon juice as a result.
