Grated Parmesan Cheese

example combination: thyme, chives, tarragon
Instructions
Preheat oven to 425ºF and place a 9x13" baking dish with tallow in the oven. Allowing the tallow to melt for the potatoes.
Chop all the potatoes and fresh herbs.
Once the tallow has melted (5 minutes) remove the baking dish and place potatoes and herbs in dish, toss with melted tallow and seasonings.
Bake for 20-30 minutes until tender. Stir only the last 5 minutes to insure potatoes have a crisp exterior.
Remove from oven and top with fresh grated parmesan. Allowing the heat from the potatoes to melt the cheese.
Serve as a dinner side or bring to a holiday or family gathering.
