Remember the irresistible taste of McDonald’s French fries? Did you know that prior to switching to seed oils they were originally fried in tallow? 

Yes, rendered beef fat was the oil of choice. Giving their potatoes that delicious beefy flavor we all love. Even now, they add a beef flavoring to the fries to keep with the original flavor profile.

IS BEEF TALLOW HEALTHY?

HOW TO MAKE TALLOW SKILLET POTATOES

What you will need are red or gold potatoes (I recommend 1-2 per person), tallow, garlic cloves, salt, pepper and parsley (or dried carrot tops, yep more on that another day) and a cast iron skillet. You can use any skillet but cast iron will give the potatoes a crunchy caramelization. 

Heat your skillet over medium heat and add 2 tablespoons of tallow. Allow tallow to melt and warm before adding your potatoes. 

Add your finely chopped potatoes (no need to peel) and stir, ensuring each piece is well coated in oil. Sprinkle liberally with salt, pepper and herbs. Cook, stirring occasionally, until tender and beginning to brown. Some potatoes may stick to the bottom of the cast iron as they caramelize. Try your best to scrape them off to prevent burning. Mince or grate your garlic onto the potatoes and stir again to lightly roast the garlic and permeate the aroma into your potatoes. 

There you have it. Tallow fried skillet potatoes, the perfect side to any steak or bbq chicken. Serve with your favorite sauce of choice. Whether that be an aioli or dollop of sour cream.
