  • 1 Cup Onion
  • 1 tbsp olive oil
  • 8 oz Salsa Verde
  • 1.5 lbs Pulled Pork
  • 32 oz Black Beans
  • 1.5 Cups Frozen Corn
  • .5 Cup Chopped Cilantro
  • 4 Cups Broth
  • 2 tbsp Salt
  • 1 tbsp Paprika
  • 1 tbsp Granulated Garlic
  • 2 tsp Cumin
  • Sour Cream Garnish
  • Avocado Garnish
  • Mexican Cheese Garnish

Instructions
 

  • Sauté onion in olive oil over medium heat until translucent.
  • Add in Salsa Verde and seasonings, bringing to a low simmer.
  • Add pulled pork to salsa onion simmer and mix well. Allowing the flavors of the salsa to permeate the meat.
  • Pour in broth to create soup base. Bring to a low simmer.
  • Add in Black Beans, Corn and Cilantro. Cook on low until ready to serve. The longer the better.
  • Serve with grated cheese, avocado and sour cream.
