- 1 Cup Onion
- 1 tbsp olive oil
- 8 oz Salsa Verde
- 1.5 lbs Pulled Pork
- 32 oz Black Beans
- 1.5 Cups Frozen Corn
- .5 Cup Chopped Cilantro
- 4 Cups Broth
- 2 tbsp Salt
- 1 tbsp Paprika
- 1 tbsp Granulated Garlic
- 2 tsp Cumin
- Sour Cream Garnish
- Avocado Garnish
- Mexican Cheese Garnish
Sauté onion in olive oil over medium heat until translucent.
Add in Salsa Verde and seasonings, bringing to a low simmer.
Add pulled pork to salsa onion simmer and mix well. Allowing the flavors of the salsa to permeate the meat.
Pour in broth to create soup base. Bring to a low simmer.
Add in Black Beans, Corn and Cilantro. Cook on low until ready to serve. The longer the better.
Serve with grated cheese, avocado and sour cream.
